13.5oz can Del Monte Fresh Cut Leaf Spinich (No Salt Added)
1/2 of a 15oz can Amy's Vegetarian Organic Refried Beans (Black Beans)
5.5oz can StarKist Gourmet Choice Solid Light Tuna Fillet (In Water) (drained)
2oz of colby-jack cheese. (You can always add more if you really want)
Mix the beans, cheese and tuna in a bowel and warm in the microwave until the cheese melts. Drain the spinach as much as possible before stirring it in. I usually stir and compress the spinach with a fork until there is very little water coming out of it. (Or you could reduce in on the stove if you want to spend the time.)
Season with garlic and white pepper or what ever. You can even use salt if you're in to that stuff but I don't recommend it. Amy's beans have plenty of salt and the cheese and tuna can make it even saltier.
Serve with chips or what ever you like.
I used the salt free blue corn chips from Garden of Eatin'.
It makes at least two servings if you were to make a meal out of it or serve it at a party and be amazed at how people try and talk themselves around it.
