Steev's Zucchini-Tomato-Chicken

  • A large zucchini
  • 14.5oz can Del Monte Diced Tomatoes (No Salt Added)
  • 1/3 of a 12.5oz can of Tyson Premium White & Dark Chunk Chicken (drained)
  • 2 Tablespoons Olive Oil
  • Cut the zucchini into thick slices and place into a glass backing dish. Pour the can of diced tomatoes over the top and add the olive oil over the tomatoes. Bake in the oven at 400 degrees for like... I don't know, several hours or so. Most of the liquid should be gone and there should be black caramelized spots on the tomatoes. (Yummy)

    Drain the chicken and stir it in.

    Optionally season with a dash of garlic and white pepper or what ever, it's up to you.

    It makes a complete meal for one person.
